I’m confused about what litigation in the context of divorce means. Is it an “all-or-none” process (i.e.,
is every aspect of the divorce considered in litigation proceedings) or, can some things be agreed to
(say, in an SA, we agree to child support, child custody, and alimony) and then only the ED part of the divorce is litigated? If so, how is that accomplished-- does the court just allot a fixed amount of time to hear the ED arguments once both sides are prepared for the hearing?

You may agree to any issues you can settle, all other issues can be litigated (heard before a judge and ruled upon). The court hears all issues separately, and yes the court will ask how much time should be allotted for the issues.
