Separation Agreement

I am refinancing a couple right now to get his wife off the loan. They are currently drawing up papers for the separation. Of course, I recommmended that they have it drawn up by an attorney but the wife does not want to do that because of cost. So, they are writing there own documents mutually agreeing to everything and getting it notarized. Do they have to take this paperwork to the courthouse and get it recorded? The wife does not want to do this and says it is nobodys business. I need some advice. Should I have her sign a quit claim also? or is that taken care of in the new mortgage loan?
