Say during marriage my soon to be ex received $10k worth of gifts from me (birhday, Christmas) and I received $30k of gifts(Birthday, Christmas). Are these counted towards ED and would I then owe him $20K?
Yes, gifts given to spouses during the marriage are marital property and are divisable.
