Can we get around the 1 year separation period by getting divorced in Nevada since we were married there even tho we live in North Carolina? And if so can we do this from North Carolina or do we need to physically go to Nevada?

You cannot file for divorce in NV unless one party actually lives there. The state also has its own jurisdictional requirements with respect to how long one must live in the state before filing for divorce.
