A vehicle was purchased during our marriage in North Carolina, we are currently separated. The Bill of Sale from the dealership is in my name. My spouse registered it in NC in his name. Which document would prove ownership in court? I did not sign any documents to sign it over to him at the time.

Not an attorney, but you own half and your husband owns half, regardless of what the paperwork says.
I wish that were so. That’s not what his lawyer is claiming. (The car was supposed to be a gift to me)
If the title is registered in his name, then it is legally his car. However, that doesn’t mean you have no marital interest in the same. You do. Half of the value of the car is your marital property and would be factored into an equitable distribution.
